A First Look at St Enodoc Hotel: One of the UK’s Most Exciting Hotel Openings
A huge congratulations to Paul Ainsworth, Emma Ainsworth and the entire Ainsworth team on the opening of St Enodoc—surely one of the UK’s most exciting hotel openings of the year.
I first visited Paul and Emma shortly after they acquired St Enodoc last year. In such a short space of time, they have done an incredible job of making the hotel their own. From the beautifully redesigned interiors to the inviting outdoor spaces, every detail feels thoughtful and considered—all complemented by the warm, welcoming hospitality for which the Ainsworths are so well known.
Estuary Bar & Grill
The concept behind Estuary Bar & Grill is refreshingly simple. Paul and the team have created a menu inspired by his Seychellois heritage and the vibrant flavours of the Indian Ocean.
It is the perfect setting for a long lunch on the terrace with sushi, yet equally suited to a relaxed dinner spent sharing plates with friends. The atmosphere is wonderfully laid-back and completely unpretentious—an absolute 10 out of 10.
We began with tuna crudo, beef tartare and a selection of sushi, which offered the perfect introduction to the menu. Then came the main event: the spectacular Seafood Tower. I’ll let the photos do the talking on that one!

Congratulations once again to Paul, Emma and the whole team—including Mason, Chelsea Lea Roper, Paul Dodd and John Walton, to name just a few.
There has been so much anticipation surrounding this hotel, and St Enodoc has exceeded every expectation. The entire team should be incredibly proud of what they have created: a beautiful, welcoming destination with exceptional food, thoughtful design and genuine heart.
