First Look at Mor, Tom Sellers’ New Restaurant at Carbis Bay Estate

Michelin-starred chef Tom Sellers has brought his latest venture, Mor, to Cornwall’s spectacular Carbis Bay Estate. Easily one of the county’s most anticipated restaurant openings of the year, it already feels like a destination in its own right.

Coastal Dining with a View

One of the first things that struck me was the setting. The restaurant’s panoramic views stretch across Carbis Bay, creating a beautiful backdrop for the experience. The interiors are just as impressive. Every detail feels considered, from the materials and finishes to the exceptional craftsmanship throughout the space. It is refined without distracting from the coastline outside—and, unsurprisingly, both my camera and I were very happy.

A Menu Made for Sharing in carbis bay

Mor’s menu is designed around sharing, giving us the perfect excuse to order a little of everything. We began with the tuna crudo and tuna toast. Although both dishes showcased the same central ingredient, they presented it in two completely different ways ~ a lovely introduction to the creativity behind the menu. One of the standout dishes was the scallop, particularly after discovering that it had been hand-picked by a freediver on a single breath. Knowing the story behind the ingredient made it feel even more special. From there, we tried the prawns and octopus before finishing with the monkfish. Each dish felt connected to Mor’s coastal setting, with seafood taking centre stage throughout the meal.

A Confident New Arrival

Considering Mor had been open for only a matter of weeks when we visited, there was already so much to applaud. The restaurant feels remarkably assured, with a strong sense of identity from the outset~ something reflected in everything from the interiors and setting to the thoughtful, sharing-led menu. Mor is an exciting addition to Cornwall’s dining scene, and I’m looking forward to seeing how it continues to evolve over time.
